Broccoli is not just a side dish, it’s a legitimate super food. It is loaded with vitamin C, vitamin K, folate, fiber and antioxidants that help fight inflammation, support kidney and heart health and even lower cancer risk.
But here is the catch: When you overcoo it, especially by boiling, you lose lots of these nutrients. Vitamin C and folate are water-soluble, which means they leak into the boiling water. So if you lose it the water afterwards, you basically throw the good things.
